Tuscan Chicken

Ingredients

1 pound chicken breast thin cut

EVOO

2 Cups chicken stock

1 tsp minced garlic

1 tsp italian seasoning

1/2 Cup parmesan cheese

1 Cup spinach chopped

1/2 Cup sundried tomatoes sliced

2 Laughing cow low fat swiss triangles

 

Directions

  • Season chicken breast with salt and pepper and italian seasoning
  • heat olive oil in skillet on medium high heat
  • brown chicken breast about 5 mins each side
  • remove chicken from pan and keep warm
  • saute garlic in same pan until fragrant about 1 minute
  • add stock, laughing cow and parmesan cheese stirring until incorporated about 2 mins
  • add spinach and tomatoes stirring until wilted about 2 mins
  • add chicken back to pan and turn in the sauce to warm up and finish cooking if needed about 5 mins

 

Serve over zoodles.
