Stuffed Shrimp

Ingredients

12 Jumbo Shrimp

Lobster or Crab Meat in bite sized pieces (optional)

Olive Oil Spray

1 medium shallot diced

1 Tbs lemon juice

1/8 tsp smoked paprika

1/8 tsp chili powder

1/8 Cup Fat Free Mayo

1/8 tsp Dijon Mustard

1/8 tsp worcestershire sauce

1/4 Cup chicken Stock

1 Laughing Cow Low Fat swiss Triangle

1/4 Cup Parmesan Cheese

 

chopped Parley or 2 Tbs dried parsley

a sprinkle of parmesan cheese

 

 

Directions

  • Preheat oven to 400* F
  • Clean and Butterfly Shrimp
  • Set shrimp on baking sheet sprayed with olive oil spray tail up
  • Top each with Lobster or crab chunk
  • Saute shallot in olive oil spray
  • Add lemon juice
  • Add all dry seasoning (except for parlsey and parmesan cheese)
  • Add all wet ingredients
  • Stir in parmesan cheese
  • Let cool to thicken
  • Dollop each shrimp with mixture on top of lobster or crab
  • Sprinkle each shrimp with extra parmesan and parsley
  • Bake for 5 or 6 mins

 

Serve on top of sauted Spinach.
