Sausage & Butternut Squash Casserole

Ingredients:
butternut squash peeled and diced
EVOO
medium onion diced
yellow pepper diced
8 oz sausage
1 tsp rosemary
1 tbsp apple cider vinegar
salt & pepper

Directions:

  • Preheat oven to 400° F
  • Season diced butternut squash with olive oil and salt and pepper
  • Roast butternut squash 30-40 minutes
  • Saute onions and peppers for about 4 minutes
  • Add sausages and saute until browned and cooked
  • Add butternut squash to pan with sausage peppers and onions
  • Add seasoning & vinegar and mix until incorporated
  • Put in baking dish
  • Bake for 10-15 minutes
