Ingredients:
butternut squash peeled and diced
EVOO
medium onion diced
yellow pepper diced
8 oz sausage
1 tsp rosemary
1 tbsp apple cider vinegar
salt & pepper
Directions:
- Preheat oven to 400° F
- Season diced butternut squash with olive oil and salt and pepper
- Roast butternut squash 30-40 minutes
- Saute onions and peppers for about 4 minutes
- Add sausages and saute until browned and cooked
- Add butternut squash to pan with sausage peppers and onions
- Add seasoning & vinegar and mix until incorporated
- Put in baking dish
- Bake for 10-15 minutes
