Ingredients
4 3oz salmon fillets
EVOO for brushing
1/4 C parmesan cheese
2 tsp minced garlic
2 Tbsp of parsley flakes
Lemon Vinaigrette (optional)
1 Tbs minced garlic
1/4 Cup lemon juice
1Tbsp Dijon mustard
1 Tbsp agave
1/2 C Olive oil
Directions
- Preheat oven to 400*F
- Brush Salmon with EVOO
- mix cheese, parsley and garlic
- Top each salmon fillet with mixture
- Bake for 12 minutes depending on thickness of fillet
- Meanwhile in a mini food processor or bowl, whisk together vinaigrette ingredients.
Serve salmon with fresh greens and or salad and top with vinaigrette.
