Parmesan Crusted Salmon with Lemon Vinaigrette

Ingredients
4 3oz salmon fillets
EVOO for brushing
1/4 C parmesan cheese
2 tsp minced garlic
2 Tbsp of parsley flakes

Lemon Vinaigrette (optional)
1 Tbs minced garlic
1/4 Cup lemon juice
1Tbsp Dijon mustard
1 Tbsp agave
1/2 C Olive oil

 

Directions

  • Preheat oven to 400*F
  • Brush Salmon with EVOO
  • mix cheese, parsley and garlic
  • Top each salmon fillet with mixture
  • Bake for 12 minutes depending on thickness of fillet
  • Meanwhile in a mini food processor or bowl, whisk together vinaigrette ingredients.

Serve salmon with fresh greens and or salad and top with vinaigrette.
