Ingredients
4 Boneless Skinless Chicken breast
1 bag of Spinach
2-3 cloves minced garlic
1 cup low fat Ricotta
Italian Seasoning blend
1 cup Low-fat mozzarella
Smoked Paprika
Directions
Sauté your garlic and spinach down, add ricotta low fat cheese off the heat.
Cut into the chicken by slicing but not all the way through.
Add your cooked spinach/ricotta into the slits.
Top with italian seasoning, mozzarella, and dash of smoked paprika
Place in the oven at 400 degrees for 30 minutes (depending on the thickness of the chicken)
For more flavor add spices…I used italian herbs and spices along with a little salt and pepper to taste. Another great meal.
