We love the R♥K Alfredo sauce and all the different things you can do with it! This is another easy recipe that can be ready quickly and is full of flavor.
Start off by preheating oven too 400*F and spray a small baking sheet with olive oil spray. Then take 4 eggs and 6 egg whites and beat them with 2 Tbsp of Parmesan cheese. Once incorporated, pour egg mixture onto baking sheet. This should be a thin layer about 1/8 to 1/4 inch thick. Bake for 7 mins. When done, let cool 5 mins, then cut into strips or sheets depending on size of your lasagna casserole dish.
The filling is totally up to you. We sauted some hot Italian bulk sausage or you can take 2 links out of their casings and cook until browned. We pushed that to the side once thoroughly cooked and started some veggies. Basically it was anything we had on hand – spinach, broccoli, onion, garlic and tomato. Once these veggies got some color, we added 1.5 cups of R♥K Alfredo sauce and mixed it all together. We didn’t take a picture of it, but imagine a chunky, creamy white meat sauce.
Then comes the assembly. Start with the “egg” noodle, then a smear of low fat ricotta, a third of the meat sauce, then repeat layers, ending with “egg” noodle on top. Sprinkle the top with 1/4 cup Parmesan cheese or some low-fat mozzarella and 1 tsp of dried parsley. Cover with foil and bake for 12 mins. Then broil last 2 mins for color.

4 Eggs
6 Egg Whites
2 Tbsp Parmesan cheese

8 ozs hot or mild italian sausage
your choice of veggies about a cup diced
R♥K alfredo sauce
1/4 C low fat ricotta cheese
1/4 C parmesan cheese
1 tsp parley flakes
