Ingredients:
1 lb thin cut chicken breast (8 pieces; pounded flat)
1 onion sliced
1 green pepper sliced
1 red pepper sliced
olive oil spray
Taco Seasoning:
1 tbsp chili powder
1 tbsp garlic powder
2 tsp cumin
2 tsp onion powder
1 tsp oregano
1/4 tsp cayenne powder
Half a cup of low fat shredded Mexican cheese
Directions:
- Preheat oven to 375° F
- Spray non-stick skillet with olive oil spray
- Saute
- Peppers and onions on medium heat; about 7 minutes
- Sprinkle with about half of the taco seasoning
- Let cool while preparing chicken
- Pound chicken thin thin for easier roll up
- Sprinkle chicken with rest of taco seasoning
- Place small stack of peppers and onions on each chicken piece
- Roll each chicken piece using toothpick or skewer, if needed
- Place chicken breasts in baking dish, sprayed with olive oil
- Sprinkle each piece with cheese
- Bake for 12-15 minutes depending on thickness
Serve with black bean salsa or Mexican cauliflower rice.
