Caprese Stuffed Chicken

Ingredients
4 medium chicken breast 6 oz each
salt and pepper
1 tsp oregano
1 tsp basil
1/4 Cup sun dried tomatoes in oil
4 slices of part skim mozzarella
8 basil leaves
4 tsp minced garlic
1/3 Cup balsamic vinegar
2 tsp agave
Olive Oil Spray

Directions

  • Preheat oven to 375*F
  • Cut a pocket in each chicken for the stuffing components to fit
  • sprinkle each chicken with salt and pepper and dried herbs
  • fill each pocket with
    • sun-dried tomatoes
    • a piece of cheese
    • 2 basil leaves
  • if necessary use a toothpick or skewer to hold pocket shut
  • heat olive oil spray in pan on medium/high heat
  • brown chicken on both sides 3 minutes per side (they don’t need to be done they will continue cooking in sauce) put in baking dish to keep warm
  • mix vinegar, garlic and agave in small bowl
  • pour into pan and bring to a simmer about 2 mins
  • pour sauce over chicken in baking dish
  • bake for 20 minutes until chicken is done (depending on thickness)

Serve over sauted spinach.
