Chicken Fajita Roll Up


Ingredients:

1 lb thin cut chicken breast (8 pieces; pounded flat)
1 onion sliced
1 green pepper sliced
1 red pepper sliced
olive oil spray

Taco Seasoning:
1 tbsp chili powder
1 tbsp garlic powder
2 tsp cumin
2 tsp onion powder
1 tsp oregano
1/4 tsp cayenne powder

Half a cup of low fat shredded Mexican cheese

Directions:

  • Preheat oven to 375° F
  • Spray non-stick skillet with olive oil spray
  • Saute
  • Peppers and onions on medium heat; about 7 minutes
  • Sprinkle with about half of the taco seasoning
  • Let cool while preparing chicken
  • Pound chicken thin thin for easier roll up
  • Sprinkle chicken with rest of taco seasoning
  • Place small stack of peppers and onions on each chicken piece
  • Roll each chicken piece using toothpick or skewer, if needed
  • Place chicken breasts in baking dish, sprayed with olive oil
  • Sprinkle each piece with cheese
  • Bake for 12-15 minutes depending on thickness

Serve with black bean salsa or Mexican cauliflower rice.
