Lamb Chops RK Style

Ingredients

6 lamb chops
1 tsp rosemary
1/2 tsp basil
1 tsp thyme
salt and pepper
EVOO
1 large shallot minced
1/3 Cup balsamic vinegar
3/4 chicken stock

Directions

  • season chops with salt and pepper
  • mix dried herbs and rub onto chops
  • let sit for 15 minutes
  • heat olive oil in pan on medium/high
  • brown chops on each side depending on how you like them cooked about 4 minutes per side for medium/rare
  • remove from pan and keep warm
  • saute shallots in same pan until soft
  • add vinegar, and chicken stock scraping up any bits on the pan
  • simmer and reduce by half about 6 mins on medium/high
  • Pour reduced sauce over chops

Serve with mashed cauliflower or quinoa.
